Whole Wheat Waffles

One of the awesome things about being a newlywed is using all of the fun stuff that you registered for and actually got!!  One of my favorite new kitchen gadgets that we received is our shiny brand spankin’ new waffle maker!!!  We registered for our Cuisinart waffle maker at Macy’s and I strongly recommend it for anyone who has a passion for waffles.

It creates delicious golden waffles with honeycomb holes that are begging to be filled with butter, syrup, or fresh fruit.  If you do not have a waffle maker I strongly suggest that you go out right now and get one.  They aren’t too expensive depending on the type that you get or if you are getting married soon make sure you register for one, you won’t regret it.

Now these pancakes are 100% whole wheat and with  my strawberry mango salsa they are pretty healthy!  I am not a huge breakfast fan so for me to eat breakfast it has to be worth my time and satisfy my picky taste buds.  It just so happens that these waffles do just that and if you make to many they freeze really well! (I’m a sucker for leftovers.)

Whole Wheat Waffles

Makes 5-7 waffles

Prep time: 10 minutes

Adapted from: Tracey’s Culinary Adventures

  • 1 1/2 cups  Whole Wheat Flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 T. sugar
  • 1 egg
  • 1 1/2 cups milk
  • 1/3 cup canola oil

Plug in that amazing electronic gadget (your waffle maker) and set it to the heating option you prefer.

In a bowl,  combine your whole wheat flour, baking powder, salt, and sugar.  Stir with a whisk until all of the dry ingredients are combined.

In another bowl, whisk your egg, milk, and canola oil together.

Slowly incorporate your wet ingredients into the dry ingredients.  Stir until you have a light brown silky batter.  (It’s okay if  there are some lumps in the batter.)

I used a soup ladle to measure and pour the batter onto my waffle maker.  It worked perfect!

Now just sit back and wait for that little green light on your waffle maker to tell you that you get to dig into that steaming golden waffle. Enjoy!

Strawberry Mango Topping

Makes  1-2 cups

Prep Time: 5 Minutes

  • 1 cup of fresh quartered strawberries
  • 1 fresh diced mango
  • 1 T. local honey
  • 1 tsp. lemon juice (optional)

Take all of the ingredients and mix them together in a bowl.  Let it sit at room temperature for at least 5 minutes before you use it.  You will see that after sitting in the bowl for a while, the honey brings everything together and it creates a yummy little sauce with the fruit that is going to be amazing on your waffles!
